Coconut rice is a fragrant dish and another staple of Anglo-Indian homes. Very easy to make and delicious!
Ingredients
- 2 tblsp olive oil (or sunflower oil, or 25g butter/margarine)
- 2 cup basmati rice
- 3 cups coconut milk (topped up with boiling water to make 3 cups total) (1.5x liquid of the amount of basmati rice used)
- 0.5 tsp tumeric
- 3x cloves
- 3x cardamoms, split
- 2x piece of cinnamon
Instruction
- Heat the oil / butter in a pan
- Fry the spices (cloves, cardamoms, cinnamon) for a few minutes
- Stir in the rice and turmeric and coat well in the oil / butter
- Add the coconut milk and water and stir
- Cover and simmer on lowest heat for (approximately) 15 minutes (or until the rice is done)
- Remove the lid from the pot / pan and allow the rice to air for ten minutes
- Fluff with a fork before serving
