Masala chai is a staple drink of contemporary India. One does not need to walk far on the streets of Bombay (Mumbai) to find a street seller serving a delicious cup of milky masala chai. The mixture of Indian spices brewed with black tea, milk and sugar, has gained international popularity. There are many variations of the recipe to make the tea, but this is a particularly good one – adapted from Lizzie Collingham’s Curry: A Tale of Cooks and Conquerors:
Ingredients
- 1 litre of water
- 16 whole cardamoms
- 2 cinnamon sticks
- 120ml milk
- 4 tea bags (strong black tea – Assam works well)
- Honey or sugar to taste
Method
- Bring water to the boil in a large pan
- Add cardamoms and cinnamon sticks. Simmer for 15-20 minutes
- In a separate pan, bring the milk to boiling point and set aside
- Add tea bags to the simmering water, remove from heat and steep for 3-5 minutes
- Remove tea bags and spices, add milk to the water
- Add honey or sugar to taste
- Serve
